Unfortunately, any plugin that alters a record to do anything will overwrite every aspect of that record. So for example a mod that changes something about a weapon will reset that weapon's name to English, and something like Realistic Water 2 that alters a cell will change the cell's name to English. mmh try going to C:\Users ame\Documents\My Games\Skyrim and opening the skyrim.ini and changing [General] sLanguage=(language) To english. Edit:be sure to backup your .ini . i haven't tried this so may or may not work.
Because each language version uses different game files for the voices and subtitles. I'm guessing that you had it set to Spanish but the install still had the English version files in the data folder, which would explain why the game ran when you switched it back to English.
